Food you miss from your country

One of the most popular dishes among children
is called "Manty." It has diced lamb,
onions and pumpkin steamed in pasta wrappings
of eggs and flour. It's delicious with butter
and chili sauce. I even brought back to Japan
a meter-long rolling pin and my mother's steamer,
which is extremely heavy. It is such a special
time for me to make this with my sons.

Let me introduce you to the quick and delicious
"stir-fried tomatoes with eggs." Fry
the diced tomatoes, add the beaten eggs and
stir. Put in chopped green onion and season
with salt, sugar and pepper. My Japanese friends
said, ÒWhy fry tomatoes?Ó because it's unusual
in Japanese cooking, but they liked it a lot.

I miss mashed potatoes, gravy sauce and stuffed
turkey, although I didn't especially like them
back home. And Twinkies! It's an oval-shaped
cake with cream inside. They sell them at mini
marts and grocery stores anywhere and I used
to eat them when I was little.

"Le coq au vin" is a famous recipe,
which most nice restaurants in France have on
their menus. Put a whole chicken into a casserole
dish, cover it and brown it in an oven. Well
sautee some diced onion, shallots and bacon
with crushed garlic, thyme and bay leaf. Add
the pieces of chicken. Pour a glass of Armagnac
and red wine, then flambe (to remove acidity)!
Simmer for over 1 hour until the wine makes
